Green teas are the most delicate of all, steeping at 175F/80C. I recommend going lower still (Around 150F/65C is a good lower bracket) when possible. They're just too easy to burn. You'll find the flavor will come out every bit as full, and you won't get the dry mouthfeel associated with burnt green tea, resulting in a smoother, crisper flavor. Lowering the temperature will also allow you to resteep leaves more easily, which I recommend with green teas. They're pricey, get full use out of them! This tea will get approximately 2-3 resteeps. If you want stronger flavor, add more tea leaves, not more time. To prepare iced, simply use twice the tea leaves and half the water you usually would. Use the same amount of time (2 minutes). Drop over a full cup of ice, to flash chill and dilute to regular strength. To conserve leaves, just steep hot and put into the fridge.
