While it doesn't contain mushrooms, pu-erh is often described as earthy or woodsy, invoking similar aromas to a forest or fungal bouquet. Some of the aromatic compounds responsible for this are phenylacetaldehyde and 2,3,5-trimethylpyrazine, which it shares in common with coconuts. Mushrooms also surprisingly share several compounds with strawberries which lend to sweet floral notes found in both. The roasted, bitter notes in the chocolate balance the umami notes of the pu-erh.
