Simeon was very difficult for me. I originally wanted to make his blend white tea based, to fit thematically with Lukes. It just didnt fit, though, and after some thinking I realized it didnt fit because the role of angel doesnt fit Simeon comfortably anymore. Hes conflicted about his role as an angel and whether thats where he truly belongs. I tried to make his blend different from the brothers, and I made it more coffee-based as a reference to his cafe in the later tasks. Cacao nibs add depth and bitterness to an angel who maybe regrets playing it safe and staying in heaven while his brothers fell.
