Now. Ive never had Ostfriesen Tee before, but Im intrigued by the Tea Culture of Northern Germany. I know that the tea has a heavy Assam blend, and is then blended with Ceylon and Darjeeling. Theres no Darjeeling available to blend with, so I subbed in Lapsang Souchong to add a smoky note to the dense brew. Serve with sugar and cream.
