Vanilla is a spice that comes from the vanilla orchid. Worldwide, there are four main varieties grown: Bourbon (or Madagascar) vanilla, Mexican vanilla, Tahitian vanilla, and West Indian vanilla. Of these, Bourbon vanilla is grown the most, with the name coming not from the famous whiskey (itself named for the French Bourbon dynasty), but from the old name for the French island Réunion. It is there that Edmond Albius, a twelve-year-old slave, invented the hand-pollination method vanilla producers still use today. Because of its difficulty to produce, vanillin (a component of vanilla) is often used as a vanilla substitute.
