These dense and highly revered cakes somehow manage to pack in the flavor and still remain mysteriously light and fluffy.
Simply Perfect Tea Cookies:
1 cup butter (two sticks) softened,
1 cup sugar,
2 eggs,
1 tablespoon vanilla extract,
1/2 tablespoon almond extract,
2 cups flour,
A pinch of salt.
Using a mixer, cream together butter and sugar until well blended. Add eggs and extracts until mixture is smooth. Gradually add flour and salt while continuing to mix dough until light and fluffy.
Cover a cookie sheet with parchment paper. Using a piping bag, pipe the cookie dough out onto the cookie sheet, making each about the size of a quarter. You may also make 'drop' cookies by spooning the dough onto the pan.
Bake at 350 degrees Fahrenheit for 8-10 minutes or until just slightly browned.
