Historically, most genealogical records have been kept on paper, and paper can be destroyed over the years. In the United States, a burned county is one in which many records no longer exist, whether because the courthouse burned down, was flooded, or was overrun during the Civil war. Doing research in a burned county is not for the faint of heart, and neither is this tea. With Burned County Chai, you can taste the smoke and imagine the fire. Many thanks to Jeff Jackson who tasted and made suggestions on several iterations of this tea. He recommends a splash of milk to enhance your smoky enjoyment.
