To make this classic Klah, of the sort you might find anywhere on Pern, I used chocolate chip Ceylon to provide a robust, roasty base. Chocolate chai provides the warm, spicy elements a good Klah ought to have. A bit of cream Ceylon rounds it off, tying the flavors together and enhancing the mouthfeel. An extra scoop of cinnamon and cacao nibs ensures that the canon 'chocolate-and-cinnamon' description of Klah is upheld. This rich, roasty, spicy brew will give you a kick to get you moving, whether you've got to fight Thread or you're late for the Lord Holder's council meeting.
In the Pern books, Klah is described as a coffee-like drink with a flavor somewhere between cinnamon and chocolate. Most people therefore try to make earth-Klah with coffee as the base, adding chocolate and cinnamon. But the entire point of Klah was to be a coffee REPLACEMENT. They had no coffee trees on Pern. So using coffee to represent Klah is fundamentally flawed. That's why I decided that klah was the perfect place to start with a Pernese tea blend series. Most of the blends will represent the great dragons, the menace of Thread, and individual characters or events in the story, but it seemed inappropriate to begin anywhere other than with klah.
