Southern sweet tea and Southern peaches are pretty much fated mates. These two flavors come together in my peach sweet tea, inspired by Kai's hospitality in "The Matchstick Grill". This is a blend of peach flavored black tea, with peach flavored rooibos tea and a dash of mango herbal tea. The tea's inclusions are apricot pieces, orange peels, and a bit of cinnamon (after all, "The Feminine Mesquite" is quite spicy)!

I knew that I wanted to have a peach sweet tea in this new set of teas for 2 reasons: 1.) peach sweet tea is frikkin' awesome 2.) you can't have a set of Southern teas and not feature the flavor of homegrown peaches, it just can't happen, not under my watch. That's why I formulated this tea. Peaches, to me, represent Southern hospitality, so I had to pair it with the book in which Southern hospitality is featured the most strongly.
