“ Like most oolongs, I did a 15 sec hot rinse to remove some fanning dust prior to steep. When hot, cocoa and nutty flavors were noted. As I slowly sipped, I noted smooth buttery caramel flavors and peppery aftertastes all the way to finish. This was a pleasant, fun and complex drink. Make sure to slowly sip when warm to enjoy the flavors. A five minute 2nd steep provided similar results. This one’s a multi-steeper. (4 mins @ 190ºF, 15 sec hot rinse, no sugar) ”
“ Interesting. This liquor has a very nice brown color. Upon drinking, it has a very strange, tight mouthfeel: not smooth; astringent, but also there is something else, a brightness under the soft palate which wanes with later steepings. It has a warm flavor, very unique, which occurs nearly entirely in the back of the mouth: nutty, not sweet, not black, not green; I would almost say sour. That's not bad though; it's only the typical complexity of oolongs; it's a flavor not to be simply taken, but explored. (The flavor cools and dims with later steepings, picking up more sweetness and a floral note.) It certainly has me thinking of a rainy day in the mountains.
Preparation: I've done it a few ways but I think I like this most recent way the best: A tablespoon and a pinch of tea per four to six ounces of water, just under boiling, for 1, 1, 2, 4, and 8 minutes. ”

“ Original Review: This tea was absolutely amazing! If all I had was this tea in my tea supply I would be more than happy to drink this everyday. I originally tasted this from a sample box. After steeping 3 or 4 times I added a bag to my cart and purchased it. I usually try to choose my tea based on health benefits more than flavor. Wuyi has 5 stars in both of those areas for me! I read that this tea could reduce the effects of cholesterol, protect against cancer, strengthen bones and protect against tooth plaque and decay. I do agree, the flavor is a slight honey-like sweet and it has a somewhat nutty layer. I also tasted the hints of white sesame and a slight warming caramel taste with that was present with different steeps. The flavors were multi-layered, and yes, satisfying. Wuyi ensemble would go well at anytime of the day, and it would be a good tea to sip with food or even sweets. I steeped using my Kyuso pot resulting in an amazing roasted flavor that was almost hypnotizing and mentally transported me to the Wuyi mountains. I usually want to share my teas, but I have been hiding this one. This Oolong loving teacher gives Wuyi Ensemble Rock tea an A+!
UPDATE: Still my favorite! I recently bought a bigger bag and wanted to update my review form the smaller sample. I am keeping the 5 stars and if it was possible I would add 10! This is my love tea. The first layer of flavor brings me immediately to imagine I am sitting by the cleanest, purest, shallowest stream in the world on the top of a mountain. The next flavors are layered and are even more amazing. If I could describe the second flavors I pick up it would be what I would get by leaning down to drink from this pure flowing water off the pebbles in the stream. This tea is absolutely amazing. I will sometimes steep it 4-7 times, not wanting to waste any of the essence that might still be present. I will have several teacups full of it sitting on the cool countertop all day and overnight for the most calming experience throughout the day and first thing in the morning. This steeps well in the Simplicity and would be perfect brewed in a Gongfu teapot. I don't have a Gongfu teapot so I used my Japanese Kyuso teapot (I know, not proper tea etiquette). My Kyuso teapot made a delicious steep as well.
