A take on Scottish breakfast in honour of my grandparents, who loved their Scottish heritage and a good, strong cuppa. The marigolds are for my grandfather's sunny disposition (he's the hedgehog), and the cornflowers are for my grandmother's love of the water (she's the mermaid). The roasty, malty flavours are nostalgic, smelling like their house and reminding me of the spirited love they shared with each other and for our family.
Note: This tea actually improves with a longer steep and slightly lower temperatures. I recommend 5 minutes, and I use 195 degrees now.
